I'm assuming with the 8-pin plugs you'd need 8-conductor cable assembly or would the shell requre a "ground" as the reference point and require 9-conductor??
Where could you acquire these DIN plugs, Mouser??
Cable recommendations?? 100V should more than adequately cover the applied voltage, and it's probably mA in current for signal.
